The product is made with appropriately trimmed domestic pig cheeks, subjected to salting and a subsequent maturing period.
At the end of maturation the product appears on the outside with a rectangular shape covered in the upper part by pepper and chili pepper and in the lower part by the rind.
The rectangular shape is deliberately given so that the final consumer, by slicing the product, has as little waste as possible.
